I'm not the biggest JRPG fan out there, but any Persona game might be a little hardcore to jump head first into a genre that you're not really familiar with. Also, what platforms are available to you? So we know what to recommend. There might be some nice exclusives but they could be irelevant if you don't own the console to play it with.
As for the ones I know, I'd say that Final Fantasy IV, while an older title, is still a good game. The story is nice and it's a very simple JRPG. Also, I've never played it myself but Final Fantasy X is often recommended when people ask for ideas for JRPGs. Super Mario RPG is also quite good, fun and easy. If you own a Switch, the remaster that just came out is the best way to try it out.

tiamat has some good suggestions. I'd also say Chrono Trigger as a classic and it's not a huge time sink.
On the opposite end of the time sink spectrum, Dragon Quest XI is huge, but I think one of the most approachable in the series. It also has a really long demo if you want to try that before committing to buying it and you can carry over your save data.
If you want an action rpg I've been enjoying Ys VIII a lot. Ys is not a series you need to play in order, so don't worry about the number.

Seconding Ys as an action RPG recommendation. Falcom has other fun action RPGs like Zwei!! And Gurumin.
Games in the Etrian Odyssey series are fun dungeon crawling JRPGs, the first three recently being ported in HD to Switch and PC.

Heck! I hardly ever seen Zwei or Gurumin mentioned :D. I haven't played the first Zwei!! yet but I enjoyed the second quite a bit. Bit of an odd system to get used to in regards to the food and exp, but fun.

I'd recommend Tales of Berseria. It was my first JRPG, and I hardly played other genres ever since. An absolutely incredible game.
Ys VIII has already been mentioned, it's also very high on my list, but it's a bit lighter on the plot than most JRPGs.
If you want something more turn-based, then Chrono Trigger is a good place to start. It's a must-play for any JRPG fan, even if it is a little bit overhyped.
Another personal favourite of mine is Baten Kaitos. It has an incredible plot, fun combat, and killer music. It's on Switch as well.

I recommend Final Fantasy 13.

If you don't mind a bit more difficulty in yours then I highly recommend The Legend Of Heroes: Trails Of Cold Steel, one of my all time favorite games I just happened to find in passing.
The Legend Of Heroes series in general is seen pretty favorably but can only vouch for Cold Steel at the moment since the others are in my backlog haha

Trails series is fantastic, but I wouldn't recommend it to someone who's new to the genre. This is an extremely slow-burn series. Cold Steel I-IV alone is a ~400 hours affair, and ideally they should be played after Sky and Zero/Azure, which combined are ~200 hours long as well. IMO, it's not a good place to get started.

I think a very good starting point is any of the Mario RPGs: Super Mario RPG, Paper Mario, Paper Mario: The Thousand Year Door, or most of the Mario & Luigi ones. Post-TTYD Paper Marios are either not normal JRPGs (Super Paper Mario, Origami King) or bad (Sticker Star etc), which is why I'm only going for the first two, but they all tend not to be overly difficult and ease into the mechanics while having great humor and general story.
Funny enough me and some friends were JUST discussing it in Discord, one that came up as a good thought is Final Fantasy IV. To boil it down without spoilers, the game is really good at layering the mechanics and ideas of how to play it as you get through the game, it teaches you the practical basics and the "language" of a lot of JRPGs as it were. The story's rather basic at this point though and I do feel like it more makes an entry point if you are already interested in JRPGs / plan to play more after than alone. Final Fantasy VII is an all time classic that's easy enough to get a handle on and has a bit of a simpler battle system, that would be a good one as well. If you don't mind limited inventory slots per character I would recommend Earthbound and Mother 3, both are some GOAT level JRPGs and the rolling HP system helps ease things in I think. Octopath Traveler II isn't too challenging and I REALLY liked it, beautiful looking game with amazing voice acting and it's one of the best on the Switch IMO. A lot of people will find Persona 5 (Royal) a really good entry point, and if you like social sim elements that's a huge buff to give it a look. I hope some of those helped out and honestly I could dig deeper too!

Modern setting in Japan. Main story is serious but absolutely wacky and funny side stories; Yakuza 7. Characters are great too. You don't need to have played any other Yakuza games to play 7.
Old-style graphics but beautifully made. Lots of freedom of what you do at what time: Octopath II
A big series that is all interconnected: Trails series, which is already mentioned by other users. There are three main sagas now available, but even between different sagas, there is still a lot of connection.
Fun, but also thought provoking stories with emphasis on social links: Persona series.
Classics: Final Fantasy IV, VI, VII, IX, XII are my favorites. Chrono Trigger is also very good. Want to name more, but you're just starting so maybe best to stick to the famous, more easily available ones. (my avatar is a FF IV character :D ).

Glad you said Switch because objectively the best JRPG that’s heavy on story and lore and world building where you can LITERALLY get lost in the world because of the sheer landmass there is. You wanna try it atleast once, it’s called Xenoblade Chronicles definitive edition on switch and luckily for you there’s 3 games including their dlc which are fully worth it because their new worlds to explore and stories that further enrich the world of xenoblade, try the first which I had recommended you, if you get sucked in then go for 2, then 3. You won’t regret.

I've not played any really, always been more into Western RPGs like Fallout, Knights of the Old Republic and Mass Effect.
However I'm currently 7 or 8 hours into Xenogears and been really enjoying it. So for an old school recommendation Xenogears isn't a bad pick.
But admittingly I am new to the genre.

I will say personally I don't have too much patience for "classic" JRPGs, hell I got kinda bored with Chrono Trigger when I tried playing it as a teenager (only a few years ago). The JRPGs that did captivate me can be categorized as:
1. Persona games: Persona 3/4/5, these are 100-hour long behemoths, but despite my impatience I still loved them a lot. The social simulator part brings a lot of variety and enriches the games. Can't think of any form of media that better captures the fantasy of "saving the world with you and your high school friends".
2. Undertale/EarthBound-likes: MOTHER 1/2/3, Undertale, Deltarune, OMORI, Jimmy and the Pulsating Mass, OneShot, OFF... Some of these are classics and others are severely underrated, all are fascinating.
3. I haven't played Paper Mario games but I absolutely loved Bug Fables: The Everlasting Sapling. Adorable, fun, very well balanced. I'd highly recommend trying Hard Mode.

Big persona fan here. I DO NOT recommend starting with persona 3. It has a lotta bullshit that you can manage after you learn how to deal with it, and a bunch of outdated mechanics. if you're dead set playing it, play FES and also mod it. But thats too much hassle to get into jrpg's imo.
In the same series, 4 Golden or 5 Royal (though 5 is very, very long) are much better starting points.
In general, id recommend
-Final Fantasy 7, 9 for the 3d entries, or 4 and 6 for the 2d entries
-Dragon Quest XI S is a great jrpg for starting out as well.
-Chrono Trigger i believe has already been mentioned.
they're all really good rpg's and really easy to get into. I personally started off with ff7 and then played 9.

You're right, in a similar vein, I recommended MOTHER 1 (aka EarthBound Beginnings) earlier, but I also wouldn't recommend starting with it. Play EarthBound or MOTHER 3 first, then come back to MOTHER 1 if you want. It is a bit unique compared to the later games, and is ahead of its time, but still a game from 1989. Personally I can recommend the MOTHER 25th Anniversary ROM hack. You could argue that it changes too many things, but the goal of it was to make the game approachable by modern standards, and personally I'd say it succeeded.

Oh my goodness I forgot to mention the one game that I think is what started the Yakuza genre and would definetly recommend playing on modern consolses. That would be shenmue!

People tend to forget great recent JRPGs games as it's a genre that had its golden on older consoles.
Anyone with a remote interest in the genre should play Chained Echoes. It's great, it's cheap, it's made all by one person and almost the equivalent of Hollow Knight but on JRPG genre. Just play it

I'll recommend something off-the-wall that no one's heard of, but I enjoyed a lot. "Kaiju Big Battel: Fighto Fantasy" is very heavily inspired by Final Fantasy 6, but with weird mascot wrestling characters. It's not too long either, maybe 10 hours?
I also really liked "Digimon Story: Cyber Sleuth", despite knowing nothing about Digimon.

I am going to look into that final fantasy game that you mentioned. Love anything that is FF inspired.
