The visuals look attractive and the synopsis sounds interesting... and then the genre is mentioned and you instantly put it back on the shelf, and move swiftly along. But why? What is it that offended you so?
For me, the following are instant turn-offs and triggers of deep disappointment and occasionally rage...

I personally wouldn’t say avoid instantly but I would prefer other genres when making a choice. Like I rather play shooters or fighting games over these as listed below. On the plus side, It would be rare for me to get a chance to play a game that is affiliated with these though since I’m open to any genre.

For me, it's usually any game without a Single Player Experience.
I avoid these, but I generally watch gameplay to confirm if I am likely to play it.
Despite any pre-alluded mentality, I may have pent-up inside.
Off the top of my head, for your consideration:
- Multi-Player - [ My social interaction level with others that I don't personally know is NPC level and even then... ]
- MMO - [ ^ ]
- VR - [ Don't own a VR Headset, not likely to either. Until much more games. More then Half-life Alyx and The Room VR ]
- Survival Horror - [ I like, Dark themes, I like Psychological Horror (Black Mirror Tv Series), just not cheap jump scares. ]
- Simulator - [ The only simulator game I ever liked was the original Sims ]
- Sports - [ Almost nothing is as less interesting to me, never liked Sports. I play games as an escape... ]

1. Real-time Strategy. I'm just not into thinking and strategizing while playing games. It's too much work for my puny brain
2. Simulation. Never understood the appeal of simulation games. Some ridiculous ones like TABS or Goat Simulator is just instant no, while others more relaxing games like Euro Truck Simulator or MSFS is pretty appealing, but I much prefer a game that has actual goal or ending
3. Sports & Racing. I put these two in the same place because both of them seems the same to me. Absolutely no interest to the genres and typical yearly release with little to no changes with each game
4. Puzzle. Pretty much the same reason as RTS. Too much thinking; Me brain hurty
Some genres that I am mostly not interested with but still willing to try
1. J-RPGs. I heavily dislike turn-based combat systems, which most J-RPGs have. Other than that, the anime-style these games usually have are very generic and/or low quality
2. Action. Not just any action games, but the balls-to-the-walls action packed games like DOOM. My experience with Bastion tells me that this kind of games isn't for me, since it can feel very repetitive after a while. I feel that this also applies to hack-and-slash and roguelike games
3. Platformer. Mario Odyssey was fun, but I don't remember much from it other than good platforming and shit ton of moons my completionist brain feel the need to collect. I can get by with something like metroidvania since there's progress in it. But if the only rewards I get are barebones story (platformers aren't known for their story) and some cool accessories then I'd prefer to play something else

These days the big one for me is Games That Can't Be Paused. I have two young girls and family life is such that I need to be able to put down the controller when needed.
I don't avoid multiplayer if it has a single player component ie I don't strictly have to group up. That way, I'm not letting anyone down if I suddenly disappear!
I don't mind horror, but I'm not one for jump scares.
I love sport IRL but have no interest in FIFA, Madden etc....the exception is a good golf game.
I don't avoid them, but I'm really bad at platformers so they need an interesting art style or stellar reviews to interest me.

Not truly a genre, but procedural generated anything is an instant no for me. So many games to play and so little time, I have no interest in wasting it in a game with lame desing.

Now that I think about it there aren't many genres that I outright dislike. I tend to avoid racing and sports games because I just don't find them interesting or particularlu fun to play most of the time, and if hidden object games are what I think they are then they definitely fall in the same category too.
Other than that I can pretty much stomach everything else, though there are some genres (rhythm games, puzzle games and, to a lesser extent, shooters) that I tend to play less because I'm just not very good at them.
Oh I almost forgot: I also don't play horror games because I'm a little bitch and I get startled by anything.

- MMOs, no time for that.

Mostly f2p games. When games are free, the community is much worse. Multiplayer experience of f2p game is much worse than normal one. Why? Cuz free usually means more toxicity now and I don't really wanna spend my time on being insulted or seeing cheater on every server so I really prefer to pay for game.

Multiplayer in general (I prefer a non-toxic environment where I decide what pace to play at)

I never thought about that before: a free game has a lower barrier of entry for trolls, asshats and cheaters. Not that I support financial gatekeeping as a tactic for keeping out the "riffraff," but you may have a point.

I play a lot of different games, but some genres I will never get in to.
-Visual Novels (I played some of Phoenix Wright: Ace Attorney), but I really don't enjoy playing them and rather just watch someone else play.
-Realistic racing games: Games like Forza bore me a lot, I want my car games to be like Rocket League/Mario Kart/Burnout Paradise City/Grid
-Realistic sports games: same as with racing games. I really like games like Lethal League Blaze, Tony Hawk Proskater series, Windjammers, Speedrunners or Mario Soccer
-Shmups: I don't have the patience to get good at them, my experience is that they just infuriate me.
-Simulators: Truck simulator and farming simulator etc never interested me.

- Rhythm games: I only say Ice-cream minigame in Birth by Sleep... It's all there is that prevented me from 100% that game. And I tried and practiced A LOT... nope, no way I was able to beat that.

Games I call "Interactive Films" that look like they focus 95% on the story and have lackluster gameplay tacked on as an afterthought. The only game of this type that I've actually played is Uncharted 3 but it was such a bore it turned me off all other games like it (Games like Uncharted, TLoU, Death Stranding etc.). In a similar vane, I was turned off RDR2 when I heard from a lot of people that it's all very slow and deliberate, very drawn out. I don't like games wasting my time to artificially inflate their longevity. Taken to the extreme, I despise visual novels. I'd honestly rather just read a book. I appreciate a good story, but IMO if you don't have solid gameplay, you don't have anything.
Battle Royales. I'd wanted someone to make one for years, but having the market flooded with them just turned me off. It doesn't help that everyone is in such a rush to jump on the bandwagon that nobody has actually taken the time to make a decent one. The likes of Unturned and Minecraft Hunger Games should have been a good starting point for future BRs to improve upon, but in the end they're still the best ones.

Battle Royales. I'd wanted someone to make one for years, but having the market flooded with them just turned me off. Fighters, RTS/Strategy and FPS/shooters are my main three. (Edit to add sports games, I honestly forgot it was a genre). FPS I'm a little more forgiving on, as I play things like Overwatch/Paladins and games with a lot of shooting in them like Cyberpunk 2077, but in general these are the three I don't like.
With Fighters I'm just not someone who enjoys the combo heavy fast-paced test of skill. No amount of practice has made me comfortable with this genre, it's just one I don't feel great at and try to avoid.
Strategy/RTS games are another, my strategy skills don't usually present themselves in the way these games usually expect their players to use them, I've always been bad at looking however many moves ahead and planning for every outcome. It's just too much for my brain to be able to enjoy.
FPS is just a personal thing, gun-based games have never been my draw. I'd also lump in Battle Royale games that incorporate a lot of FPS/shooting in here as well. I prefer a fantasy setting, which generally doesn't involve guns/typical FPS style. I will play virtually anything as long as I have the time. That being said, most traditional popular sports games just don't interest me. I don't care about or watch them in RL, and just don't have the interest for them in gaming.
Outside of that, I am not too interested in MOBAs or Battle Royale games.
